Low Fat Low Calorie Cheesecake Recipe

Redwood Hill Farm asked me to work with them on using a recipe with one of their products.  I could use one of theirs, or create one of my own.  I decided to create one of my own.  I love cheesecake.  What I don’t love are the calories and fat associated with them.  I came up with a low fat and low calorie Cheesecake Recipe.

This recipe calls for using the Redwood Hill Farm Vanilla Yogurt.  It’s both low in calorie and low in fat.  Please forgive me for my pictures.  Whenever I take pictures of food, my camera doesn’t want to cooperate.  This cheesecake is really good.  You should try it.

Low Fat and Low Fat Cheesecake Recipe


4 cups Vanilla Redwood Hill Farm Yogurt

8 ounces fat free cream cheese

1/4 cup Graham Cracker Crumbs (This is an approximate.  You just need enough to coat your spring form pan.

2/3 cup sugar

1/8 cup skim milk

2 tablespoons flour

1/2 cup cholesterol-free egg product

1 and a 1/2 teaspoon vanilla

Fruit as a topping


Heat oven to 300 degrees.  Spray a 9 inch springform pan, and sprinkle the graham cracker crumbs to give you a nice coating on the bottom and sides.  Beat your cream cheese on low, and gradually add all of the other ingredients.  Pour the batter into the pan.  If you want your cheesecake to be thicker, strain the yogurt overnight.  (Line a strainer with a double thickness of cheesecloth and place over a bowl. Cover and refrigerate for 12 hours)

Bake in the oven for an hour.  Then, turn the oven off and leave it in the oven for 30 minutes.  Cool out of the oven for 15 minutes.  Cover tightly and refrigerate for 3 hours.  Serve with fruit on top.
