One thing I love about summer is making salads with fresh produce. I love creating salads with different ingredients, making them tasty and healthy. I don’t make my own salad dressing that often, usually I just use vinegar on my salad. For this salad, I created my own salad dressing that the whole family loves. It’s creamy, low calorie, and fat free. My salad isn’t fat free, but it has healthy fat in it. Nuts are a great source of protein and healthy fats. They should be incorporated into your meals sparsely. A little is great for you, but a lot isn’t.
Summer Salad Recipe
1 Cup Matchstick Carrots
1/4 Cup Sliced Olives
1/2 Cup Fat Free Shredded Cheddar Cheese
1/2 Cup Fat Free Shredded Mozzarella Cheese
2 Ounces Fisher Dried Sweetened Cranberries
1 Head of Lettuce, Cut into bite size pieces
1/4 Cup Red Cabbage, cut into small pieces
3 Small Tomatoes, cut into slices or cubed
1 Cup (approximately 3-4) Small Sweet Peppers, julienne sliced
1/2 Cup Fisher Sliced Almonds
3/4 Cup Fisher Walnut Halves & Pieces, break up the larger pieces
Directions: Toss everything into a salad bowl and serve.
No Fat, Low Calorie Creamy Raspberry Dressing
3 Ounces Fat Free Greek Yogurt
1/4 Cup Fat Free, Sugar Free Raspberry Vinaigrette Dressing
Directions: Mix together in a salad dressing shaker and serve over your salad.
