Healthy Low Calorie Potato Salad Recipe

I made a healthy, low calorie potato salad last night.  It is also low in fat.  I used nonfat dressings and nonfat Greek yogurt, instead of mayonnaise.  I also left out the boiled eggs that are usually put in potato salads.

Update:  I had some tonight, and added sauerkraut to it.  It was great!

Low Calorie Low Fat Potato Salad Recipe

Ingredients:

2 Celery Stalks, chopped into small pieces

1 Small Vidalia Sweet Onion, chopped into small pieces

1/4 Cup Fat Free Honey Mustard Dressing

1/4 Cup Fat Free Ranch Dressing

1/4 Cup Fat Free Greek Yogurt (I used Chobani)

1 Gala Apple, cored and chopped into small pieces

3 Pound bag of small red potatoes, cooked and cubed into bite size pieces

Directions:

After everything is chopped, measured out, and the potatoes have cooled and been cut, mix it all together.  Place in the refrigerator to cool.  This is a super easy recipe to follow.  You can add salt and pepper to taste.

Suggestions for alternatives:

Cut up some chicken into the salad for extra protein if this is a meal, instead of a side dish.

Add sweet peas into it.  I love to add vegetables to both my potato salad and my macaroni salad.
